Most black specks in puff pastry are completely harmless, and often a sign of natural, less-processed ingredients. Tiny bits of bran from the flour, or browned milk solids from real butter, can appear as flat, dark flecks that don’t smear, spread, or turn fuzzy. They stay put, bake up darker, and simply become part of the crust’s color and character. In these cases, there is no safety issue at all—just a cosmetic surprise.
Caution is needed when the pastry looks patchy, smells sour, or has fuzzy, raised spots in shades of green, blue, pink, or white. That’s when you’re likely dealing with mold or serious oxidation, and the safest choice is to discard it. To prevent future worry, keep puff pastry tightly wrapped, frozen solid, and always bake on clean trays or fresh parchment so residue doesn’t create new, suspicious marks.
